Swedish Crêpe Cake Recipe

Serves 6-8
Ingredients
200ml (7fl oz) double cream
240ml (8fl oz) crème fraîche
3 tbsp caster sugar
¼ tsp vanilla extract
250g (9oz) raspberries
6 crêpes
icing sugar, to serve
Preparation
1. Place the cream in a large bowl and whisk to form stiff peaks. Add the crème fraîche, caster sugar, and vanilla extract, and whisk well to combine. Set aside four tablespoons of the mixture.
2. Reserve a handful of the raspberries and place the rest in a bowl. Crush them with the back of a fork. Gently fold the crushed raspberries into the cream mixture to create a ripple effect.
3. Place one crêpe on a platter, spread over one-fifth of the cream, and top with a second crêpe. Repeat with the remaining crêpes, spreading equal quantities of the raspberry cream mixture between each layer.
4. Spread the reserved cream mixture on top of the crêpe cake. Scatter over the reserved rapsberries, dust with icing sugar, and serve immediately.
