It's hard to imagine a more satisfying meal than these sweet potato burgers. It's a delicious patty made from sweet potatoes mixed with an exciting combination of spices, all stacked up with crunchy vegetables!
Makes 2 burgers
Prep time: 30 minutes
For the patties:
1 large sweet potato
½ bunch of chives
pinch of freshly ground black pepper
½ tsp sweet smoked paprika
1 tbsp dried marjoram
pinch of ground cumin
pinch of ground allspice
1 tsp Dijon mustard
2 tbsp plain or gluten-free flour
½ cup (40g) fresh breadcrumbs
2½ tbsp canola oil
For the burgers:
2 large burger buns
vegan barbecue sauce
handful of salad leaves
small piece of cucumber, sliced
1 tomato, sliced
handful of cilantro leaves
1. To make the patties, peel the sweet potato, chop into little pieces, and cook for 10–15 minutes in salted water, until tender. Drain in a sieve. Peel and finely chop the shallot. Snip the chives finely. Use a potato masher to mash up the sweet potato with the shallot and chives in a large bowl until evenly combined. Stir in ½ tsp salt, pepper, the paprika, marjoram, cumin, allspice, and mustard. Add the flour and mix everything thoroughly again.
2. Spread the breadcrumbs out on a plate. Shape 2 even patties from the potato mixture and turn them in the breadcrumbs. Heat the oil in a pan and fry the patties over a medium heat on both sides until golden brown. Remove from the pan and leave to drain on some kitchen paper.
3. Split the burger buns in half, toast them, and spread the cut surface with barbecue sauce. Top the lower halves with salad leaves, then a patty, cucumber and tomato slices, and some cilantro. Wrap in saran wrap. If desired, add some extra barbecue sauce.
