6 Tasty Soups To Start The Year Right

New Years resolutions can be tricky to keep. Beet and Orange Soup

This ruby-hued soup dish is a delicious combination of earthy beets and sweet oranges, and provides folate to aid healthy cell growth. This beet soup can be frozen for up to eight weeks, so make in advance and serve chilled.

Ingredients:

2 medium beets, ends removed

1 tbsp olive oil

350ml (12fl oz) freshly squeezed orange juice

1 tsp red onion, chopped

30g (1oz) basil, finely chopped

1tsp fresh ginger, grated

250ml (9fl oz) water

Method:

1. Preheat oven to 450°F. Line a baking tray with foil. Place beets on prepared baking tray, drizzle with olive oil, and roast for 20-45 minutes, or until cooked through and fork-tender.

2. Remove beets from oven, carefully peel, and cut into cubes. (You should have about 400g/14oz roasted beets).

3. In a blender, combine roasted beetroot, orange juice, onion, basil, ginger, and water. Puree for 30 seconds.

4. Transfer blending vessel to fridge for 30 minutes, or until chilled. Blend briefly to recombine ingredients and serve immediately.
