INGREDIENTS:

Crêpes

  • 3/4 cup (100g) all-purpose (plain) flour
  • 2 tbsp granulated (caster) sugar
  • 1/2 tsp fine salt
  • 2 eggs
  • 1 cup (250ml) whole milk
  • 2 tbsp unsalted butter, melted and cooled, plus extra for cooking

Fillings

  • 3/4 cup (200ml) heavy (double) cream
  • 1 cup (240ml) crème fraîche
  • 3 tbsp granulated (caster) sugar
  • 1/4 tsp vanilla extract
